How can I improve my inkscape results

I need to get svg files for video scribe but I am not 100% happy with the end result.

Using Inkscape for text produces as a start outline letters and then fills them in.

To convert a jpeg or png to svg the end result is not tracing an image - it just simply goes mad like its scribbling the image.

How can I simply improve my results
